Masala Arbi(Colocasia)

Masala Arbi and Baby Potatoes:  Frist item is masala arbi and secend item is baby potatoes step by step cocked and ready to your recipe.

Ingredients:

Arbi (colocasia) – 1/2 kg

Pepper corns – 7-8

Gram flour –2 tbsps

Garam masala – 1 tsp

Dry mango powder –1 tsp

Coriander powder –1 tsp

Salt to taste

Cumin seeds – 1 tsp

Red chili powder – 1/2 tsp

Coriander leaves – optional

Carom seeds – 1 tsp

Oil-4 tbsps

Green chili – 2

Method:

1. Wash arbi (colocasia) thoroughly so that all the unwanted material is removed. Boil it in a pressure cooker. After 1-2 whistle remove it and drain it out of the water and let it cool for a while.

2. Peel arbi (colocasia) and cut into 2 halves.

3. In a kadhai/wok, heat the oil, add cumin seeds and let them splutter.

4. Now add gram flour, dry mango powder, carom seeds, salt, pepper corns, coriander powder, red chili powder and garam masala and mix it well and cook them for few sec-onds till the oil separates out.

5. Then add peeled arbi (colocasia) halves into the gram flour mixture and mix it well and
cook it till it’s crispy and ready to eat.

6. Garnish it with coriander leaves and also with lemon wedges (they both are optional)
and green chilies

7. Serve it in the serving bowl and have it with Chhapatti or parantha.

Baby Potatoes

6  PEOPLE

Ingredients:

Baby potato – 12-15

Salt to taste

Cumin Seeds-1 tsp

Turmeric powder – a pinch

Red chili powder-1/2 tsp

Carom seeds- 1 tsp

Pepper powder- 1/2 tsp

Garam masala- 1 tsp

Pepper corns- 4

Coriander powder – 1 tsp

Fenugreek seeds – 1 tsp

Oil-4 tbsps

Dry red chili – 1

Method:

1. Firstly, cut the baby potatoes into halves or if they are little big cut into 3-4 pieces.

2. Heat oil in kadhai/wok and add dry red chilies, fenugreek seeds, carom seeds, cumin seeds and let them crackle/splutter.

3. Now add all the spices like salt, red chili powder, dry mango powder, roasted cumin powder, garam masala, coriander powder and turmeric powder. Sauté it for few sec- onds, don’t burn it.

4. Now add the baby potatoes and mix well with the spice mix. Fry for 6-7 minutes on medium flames till everything gets mixed well and the flavors gets along with the potatoes.

5. Adjust salt as per your taste and add some lemon juice and mix again.

6. Serve Spicy Baby Potatoes along with chap- atti or parantha for lunch or dinner.
