Mix Vegetarian Fried Rice

Mix Vegetarian Fried Rice : Cut and finely chop all the vegetables and soak them in water and keep them aside. Boil the rice in a pressure cooker till 2 whistles. Drain them and keep them aside for cooling.

Ingredients:

Capsicum – 2

Oil – 3 tbsps

Carrot – 2

Ginger paste –1 tsp

Green beans – 100 gm

Soy sauce Peas – 100 gm

Salt to taste Rice – 2 cups

Spring onion – 1

Garlic paste – 1 tsp

Method:

1. Cut and finely chop all the vegetables and soak them in water and keep them aside.

2. Boil the rice in a pressure cooker till 2 whistles. Drain them and keep them aside for cooling.

3. In a kadhai/wok heat the oil and add ginger-garlic paste, let them get brown, add soy sauce, chopped spring onions, capsicum, green beans, peas and grated carrots and let them cook for 3–4 minutes.

4. After that add salt and pepper powder and mix them well.

5. Add boiled rice into the mixture, fry them and stir until the oil separates out and they are finally cooked.

6. Before serving garnish it with spring onions and coriander leaves (it’s optional).

7. Serve it with Manchurian or with any sauce of your choice.

 

Dalia Pulao

15 MINUTES 30 MINUTES 45 MINUTES 5 PEOPLE

Ingredients:

Capsicum – 1

Pepper corns – 6

Carrot – 1

Cumin seeds – 1 tsp

Cauliflower – 6–7

florets Bay leaf – 1

Dalia/Broken wheat – 1 cup

Green beans – ½ cup 

Onion – 1

Salt to taste Peas – 100 gm

Oil – 3 tbsps.

Potato – 1

Coriander leaves – few sprigs

Water – 2 cups

Method:

1. Cut all the vegetables very finely and in little bit big pieces. Grate the carrots and peel the peas. Wash them thoroughly.

2. In a pressure cooker, heat the oil, add cumin seeds, bay leaf and pepper corns and let them splutter.

3. Now add chopped onions and fry them till they get golden brown. Then add cauliflower florets, potato cubes and stir them well.

4. Then add green beans, peas, capsicum and grate carrots and stir them for 2–3 minutes more.

5. After that add salt, pepper powder and mix them.

6. Finally add Dalia/broken wheat into the vegetable mixture with 2 cups of water. If required add more salt.

7. Cover the pressure cooker and let it cook till 2 whistles.

8. Afterwards, garnish it with coriander leaves and serve it in the serving bowl or plate with raita or mint chutney or have it alone.
